United Airlines has announced a partnership with Chef’s Table — the brand behind Netflix’s acclaimed culinary documentary series — to overhaul its Polaris international business class dining experience with 11 world-renowned chefs creating exclusive, regionally-inspired meals.

What’s on the New United Polaris Menus?

This isn’t United slapping a famous name on a reheated chicken dish. Each chef is creating a complete meal experience — think appetizer, salad, and entrée — inspired by their home city, and the lineup announced on March 12 is genuinely impressive.

Travelers departing Los Angeles will find dishes from Nancy Silverton of Michelin-starred Osteria Mozza. Flying out of Chicago? Jenner Tomaska of Michelin-starred Esmé is behind the menu. San Francisco gets David Barzelay of 2-Michelin-starred Lazy Bear. Washington D.C. travelers get Isabel Coss and Matt Conroy of Michelin-starred Lutèce.

The international gateways are equally strong. London departures feature Tomos Parry of Michelin-starred Mountain and Brat. Tokyo gets Tashi Gyamtso of the farm-driven Jimgu. São Paulo rounds out the international list with Manu Buffara, widely regarded as one of Brazil’s most innovative chefs.

The partnership with Chef’s Table adds legitimacy that goes beyond typical airline marketing. These are chefs whose restaurants are genuinely difficult to get into, and now you can taste their food at 35,000 feet simply by booking a Polaris business-class seat on qualifying international routes. That’s a compelling value proposition, especially for travelers booking with United MileagePlus miles.

Polaris business class on international routes can be booked for as few as 60,000 to 70,000 miles one-way, depending on route and date, making the per-mile value of this dining upgrade even stronger.

How United Stacks up Against Delta One and AA Flagship

United’s Chef’s Table partnership is a direct shot at its 2 biggest rivals in premium transcontinental and international travel.

Delta One has long leaned on its partnership with Danny Meyer’s Journeys collection and its broader focus on locally-sourced ingredients, which has earned it strong loyalty among premium travelers. American Airlines Flagship dining, meanwhile, has invested heavily in its Flagship First and Flagship Business lounges and rotating chef-driven collaborations.

The difference with United’s approach is the coherence of the concept. Rather than a rotating roster of loosely affiliated chefs, United is building a unified, story-driven culinary brand around Chef’s Table — something travelers already have an emotional connection to from the Netflix series.

It also has geographic specificity baked in: the meal you’ll enjoy depends on where you’re departing from, and neither Delta nor American has fully executed that at this level.

Final Thoughts

United Polaris has been closing the gap on Delta One in terms of hard product for a few years now, and this dining partnership accelerates that momentum in a tangible way.
