Alaska Airlines has teamed up with Chef Brady Ishiwata Williams, a James Beard award-winning chef, to introduce new in-flight dining for first class passengers.

New Alaska First Class Menu

Alaska Airlines is tapping into the “chef’s table” concept with new rotating first class menus crafted by renowned West Coast chefs. Dubbed “Chef’s Table,” guests will have their pick of up to 5 dishes, including at least 1 hot meal option on flights over 1,100 miles.

At the head of the new menu is Chef Brady Ishiwata Williams, an award-winning chef from Tomo, a Japanese-American restaurant and wine bar in Seattle.

Here’s a look at the menu:

  • Breakfast: Mochi waffle and fried chicken: Rice flour bubble waffle topped with crispy tempura fried chicken, served with an apple, miso butter, and a tamari-maple syrup.
  • Dinner: Klingemann Farms Glazed Short Rib: Klingemann Farms Short Rib, from Central Washington, glazed with a balanced serrano jaew sauce. Complemented with soy and Shaoxing Wine, stir-fried rice cakes, spinach, and hon-shimeji mushrooms, and steamed baby bok choy. Served with tangy pickles and radishes.
  • Dinner: Buckwheat Soba with Ahi Tuna Tataki – buckwheat soba noodles in a cold ponzu broth, served chilled and topped with edamame, scallions, pickled seaweed, tofu, cucumber, and shiso leaf. Seared ahi-tuna tataki served on the side with a spicy chili crisp.

The menu will be available on flights between Seattle (SEA) and New York (JFK), Newark (EWR), and Washington (DCA).

“Every dish and ingredient carries a story, and I’m incredibly proud to partner with an airline that champions local business owners like me to bring elevated and culturally rooted cuisine to the skies,” said Chef Williams.

Pre-Ordering Meals on Alaska

Alaska’s new menu rolls out on June 5, 2025. However, pre-orders are available now — and given how delicious these meals look, you’ll definitely want to order ahead to make sure you get your first choice.

To pre-order your meal on Alaska Airlines, you’ll simply log in to your account on AlaskaAir.com, select the trip for which you’d like to place your meal order. You’ll then select the “Pre-order food” button, select your flight, and choose your meal.

Hot Tip:

Alaska allows you to place your request within 2 weeks of travel, so this option won’t be available if you’re outside of that timeframe.

Alaska has unveiled some exciting new dishes for first class, including short rib and buckwheat noodles. The airline is known for serving some of the best meals on domestic flights, and its partnership with award-winning chefs has earned it this distinction.
